Like the country itself, India’s cuisine is flamboyant, bursting with flavour, aroma and texture. As you travel throughout the country, your taste buds will be delighted with a myriad different taste combinations, from the traditional vegetarian dishes of the south to meaty Mughal cuisine in the north, the glowing tandoor ovens of Punjab and the European influences of the former colonies.

Indian cuisine is renowned for its use of spices, from the pungent black pepper grown in Kerala to the coriander seeds that lend flavour and body, both of which are used in just about every savoury Indian dish. Cumin seeds form the basis for most Indian curries, while turmeric is also widely used. Southern dishes are noted for the sour tang of tamarind, while green coriander finds its way into savoury dishes and desserts alike.

Rice is a staple dish in southern India and comes in many varieties, from fragrant basmati to the red grained rice of Kerala. In the north, wheat is used to make a huge range of breads, including the unleavened roti and chapati, the thicker naan and puri, as well as many more. Another ubiquitous staple you are bound to encounter is the endless types of dahl (curried lentils or pulses), from the slightly sweet channa to the green moong and black urad, and others.

While India is largely vegetarian, chicken, lamb and mutton are available in many areas. Northern India’s Mughal cuisine, for example, is dominated by meat dishes such as curries, kebabs, koftas and biryanis. Tandoori dishes, which consist of marinated meat cooked in a clay oven, are also a north Indian favourite. Along the coast, local cuisine makes the most of the readily available seafood and coconuts. Throughout India, vegetables are served in dozens of creative ways, and can be fried, roasted, curried, stuffed, mashed or dipped into batter to make crispy fritters called pakora.

India is notorious for its incredible range of sticky, sinful sweets, from fudge-like barfi to soft halwa, and various types of sweet balls made out of a melange of different products and flavoured to cater for every taste.
